My 301st recipe, "Blueberry Yogurt Popsicle", a very easy to make and delicious summer treat. A truly rich, creamy, sweet treat, which can be prepped up in no time and enjoyed with absolutely no guilt. It is primary made from fresh yogurt and berries which are actually good for you.

This Blueberry Yogurt Popsicle is actually a inspiration from RK. Not because RK had original created this recipe and not because he loves blueberries. It is just because he managed to slip ina box of fresh blueberries into our shopping cart and then through the billing counter during last week's shopping, without me noticing 🙂 He claims that it is very good for your health being rich in antioxidants and it was on sale. Simply he made me scramble across and make a recipe out of blueberries, just in the intention not to waste it.

I do not have any hatred towards blueberries. It is just that I have not given its fair chance. I have only tasted blueberries once earlier out of curiosity. Somehow I did not like it fresh. It kind of tasted bitter to me and hence I just started to stick with my favorite strawberries henceforth. I occasionally have blueberry pancakes from the continental breakfast buffet at the hotels. But I would not seriously count it as a recipe using fresh blueberries. They were at most times prepared from a pre made, out of the box batter.

When I visited Mt.Rainier a few months back on vacation, I picked upa candy from the Visitor Center. It was marked as Huckleberry candy. Even though I did not know what a huckleberry wasI still gave it a try. It tastedso delicious that I decided to purchase a whole bottle of huckleberry jam from the airport, when I was returning. This experience with huckleberries gave me confidence that blueberries should not be asbad when mixed up with sugar and other flavors.

I then remembered the colorful swirl ice pops found everywhere on pinterest. I had decided to make my very own version using the blueberry and yogurt. This Blueberry Yogurt Popsicle is so simple to make and essentially brings out the natural flavors of both the blueberry and yogurt. And more than the taste of this Blueberry Yogurt Popsicle, I love the little specks and streaks of the blueberry which peeks out of the yogurt layer. Would surely be the perfect treat for your kids as well.

This Blueberry Yogurt Popsicle is very light and refreshing and perfect on a hot and sultry summer day, like today. The blueberry when made into this thick sugary syrup, adds the perfect bit of color, flavor and the extra magic to thefrozen yogurt pop. But the frozen yogurt is no less delicious. I can simply eat up scoops of fresh and tasty homemade yogurt when flavored with vanilla and sugar. And when frozen into a popsicle along with the blueberry syrup, it becomes one my most favorite flavors on a stick 😉

  • Fresh Blueberries - 1 Cup
  • Sugar - ½ Cup
  • Water - ¼ Cup
  • Yogurt - 1 ¾ Cup Fresh and Thick
  • Vanilla extract - ½ tsp

Instructions

  • First add the fresh blueberries to a pan along with ¼ Cup of sugar and water. Mix well and heat in medium flame.

  • When the blueberries start to soften, slightly mash them up using the ladle. Continue to cook by stirring frequently until the blueberry mixture thickens up into a saucy consistency. Turn off the flame and bring it to room temperature.

  • Meanwhile, add the yogurt to a mixing bowl. Add the remaining ¼ cup of sugar and vanilla extract. Using an electric/hand whisk, blend the yogurt until smooth and silky.

  • Take your ice pop mold. To each mold, add the yogurt until half full. Add couple of teaspoons of the blueberry mixture. Gently swirl it in using a long wooden skewer. Repeat the yogurt blueberry layers until the mold is almost full. Insert the popsicle sticks.

- To remove the ice pops from the molds easily, immerse the mold in warm water for a few seconds.

- Do adjust quantity of sugar based on taste preference.

- You can also make similar ice pops using other fresh berries like raspberry, strawberry, etc.

- Yogurt should be thick and fresh. Else the flavor of the ice pops will not be as desired.
