So what’s the difference between this corn fritter recipe and a pancake made with the same ingredients?

According to The Old Foodie: “Not much really.” HA!

Some corn fritter recipes are thick and pancake-like, while others look like deep-fried blobs of dough.

My gluten-free corn fritter recipe is more pancake-like. It’s also reasonably wholesome since it’s not deep-fried.

Ingredients

  • all-purpose gluten-free flour
  • baking powder
  • salt
  • ground black pepper
  • sugar or a sugar substitute like monk fruit sweetener
  • dairy-free milk
  • large eggs
  • golden sweet corn
  • chopped onions
  • ham, bacon, pancetta, or sausage (optional)
  • Cooking spray
  • Ketchup, pancake syrup, or other sweet syrup for serving

How to make this gluten free corn fritter recipe

Make a stack of this easy corn fritters recipe is perfect for Pancake Day.

  1. Heat pancake griddle, nonstick skillet, or frying pan.
  2. Combine all-purpose gluten-free flour, baking powder, salt, pepper, and sugar in a large bowl.
  3. Add eggs to dairy-free milk in a small bowl and beat until combined.
  4. Pour milk and eggs into the flour mixture and stir until combined. Add corn, onions, and ham if used. If the batter seems too thick, add more milk.
  5. Grease pan with cooking spray. (You can also use vegetable oil, olive oil, butter, buttery spread, or even grease leftover from cooking up the bacon.)
  6. Using a 1/4 cup measure, spoon out the batter onto the hot pan. Cook the pancake until each side is golden brown.
  7. Keep corn fritters warm in the oven until served on a parchment paper-lined baking sheet. Separate layers of fritters with a paper towel, so they don’t stick. They’ll also help soak up any excess oil.
  8. Store leftover fritters in an airtight container in the refrigerator. Heat up the next day in the microwave.

Can I make this dairy-free?

Yes, you can make dairy-free corn fritters. Just use any variety of dairy-free milk you like.

Initially, I used plain rice milk (no sugar added). These days I swear by unsweetened coconut milk.

You can also try unsweetened soy milk, almond milk, or oat milk.

I recommend only using unsweetened varieties since you’re adding sweetener. If you only have sweetened milk, eliminate the sugar or sugar substitute.

Why are my fritters soggy?

If you want crispier fritters, here’s what you need to do:

1) Increase the amount of corn. That’s because there’s too much batter in them! Less batter makes a crispier fritter.

2) Use fresh corn, not canned or frozen. (That’s because fresh corn is drier and not watery.)

3) Substitute some cornflour or corn starch for the flour. (Both are gluten-free, so not a problem!)

4) Add some parmesan or cheddar cheese to the batter. Cheese gets crispy when it melts.

Can I make this a sugar-free recipe?

Yes, corn fritters can be made sugar-free by using a sugar substitute.

I like using monk fruit sweetener or Swerve. Both are all-natural, no-calorie sweeteners with no funky aftertaste.

Do I have to use whole eggs?

I used whole eggs in my easy corn fritter recipe.

Lower the fat by using the equivalent of two eggs worth of eggs whites.

What kind of meat can I use in this recipe?

When I lived in Georgia, I used country ham, the Southern version of prosciutto, in my corn fritters.

Instead, you can use:

  • thick deli ham
  • meaty bacon
  • pancetta
  • Italian sausage
  • spicy chorizo

This is also a great way to use leftover turkey breast or Instant Pot ham from Thanksgiving.

Can I make this a vegetarian or vegan recipe?

Yes, you can!

Leave out the meat altogether in this recipe. Instead, add sautéed diced peppers or mushrooms to make this a vegetarian corn fritter recipe!
