  • Sliced dinner ham – Use your favorite sliced, fully-cooked ham for this recipe. I typically choose Hormel brand spiral sliced ham. You can also substitute sliced deli ham if you like.
  • Mayonnaise and whole grain mustard: What’s a sandwich without a creamy spread? These traditional, familiar flavors are just the right combination.
  • Olive Oil and butter: For frying the eggs. I like the combination of the two, but you do whatever you like.
  • Marbled rye bread: I think the choice of bread matters as much, or even more, than the fillings in most sandwiches. Marbled rye adds a unique, earthy taste and is very visually appealing. My second choice would be pumpernickel – yum!
  • Sharp cheddar cheese: What’s a ham sandwich without cheese? Sharp cheddar’s robust flavor goes really well with the ham and eggs.
  • Tomato slices and lettuce: These typical sandwich garnishes add a bit of freshness and crunch.

🔀 Recipe Variations

  • For a spicy kick, add some jalapeno slices.
  • Substitute Canadian bacon for the ham.
  • Add avocado slices, bacon, or hot sauce.
  • Swap out the cheddar cheese for Swiss cheese, provolone, or American cheese.
  • Experiment with different bread types like pumpernickel, whole wheat, sourdough, English muffins, or even a croissant.

❓ Questions About Ham and Egg Breakfast Sandwich

Can you suggest an alternative to the mayo-mustard spread?

Sure. You can explore alternatives like cream cheese, avocado spread, or a homemade aioli.

Can I make this sandwich ahead of time for meal prep?

You can assemble the sandwiches the night before, wrap them in foil, and refrigerate them. In the morning, pop them in the oven to warm up.

Can I use regular mustard instead of spicy whole grain mustard?

Yes, of course, you can. Regular mustard will create a different flavor but will still complement the sandwich nicely.

What’s the best way to fry eggs without breaking the yolks?

To prevent yolks from breaking, crack eggs into a small bowl first, then gently slide them into the hot pan. Cook on medium heat and avoid flipping for over-easy or sunny-side-up eggs.

The shank end (or leg portion) sports that classic ham profile, so it's a good choice for a picture-perfect table. The meat tends to be leaner and it has one long bone, which makes carving easier. The butt end (the top half of the ham) has more tender, fattier meat, lending a richer flavor.
